Our Story

“Mùa” is the Vietnamese word for seasons.
At MÙA restaurant, we serve modern cuisine that tells the story of the best Vietnamese ingredients. 

Every menu is unique and influenced by the availability and quality of the products, from organic vegetables and herbs from the nearby gardens, to the freshest seafood and local meats.

In addition, the team at MÙA is committed to reducing the environmental impact of the restaurant. We compost in a closed-loop system, limit food waste and avoid single-use plastics as much as possible. We are continually searching for the most eco-sustainable products and suppliers.

About the chef:
Tru Lang

Born in France and raised in Boston, Tru studied Political Science at the University of Massachusetts before starting to cook professionally. His career has brought him to kitchens throughout the United States, Europe, and Asia.

In April 2017 he began a 6-month trip around kitchens in Tokyo and Taiwan, before landing in Vietnam for the first time in his life. He spent a month exploring this beautiful country solo on a motorbike, riding from south to north. In December 2017, Tru relocated permanently to Hoi An and has been living and cooking there since.

Tru has 14 years of experience in the food industry ranging from managing a fleet of food trucks to cooking in Michelin-starred kitchens.

Most recently, Tru has also been focusing on the core pillars of community, sustainability, and holistic nutrition in cooking and operating a restaurant. In promoting and sharing these ideas, he hopes we can continue to evolve and spread the joy of dining and cooking to future generations.
